Salt, black pepper, water and olive oil.

Method

Right Peel – first the potatoes, carrots, scrape and leave to one side.

Stuff the cavity with your garlic, herbs, lemon quarters (pressing out the juice in the cavity first) and chili peppers.

Now theexciting bit – diving birds in the boiling water – for five minutes – turning it over and over.
Let dry – either by hanging or placing on a hook on some absorbent paper towels for 30 minutes
Meanwhile, bring your potatoes to a boil and parboil for five minutes. Remove from the heat – Drain and let them fall in its pan.
Paint your bird with olive oil – salt and black pepper and place it in the oven on a large roasting pan on 350f/175c for thirtyMinutes.
Toss your potatoes in olive oil and add them and the carrots to the roasting pan set on.
Cook for another 30 minutes turning once the vegetables.

Remove from the oven and arrange the chicken and vegetables on a serving plate.

Bring to a boil. Cover, simmer 30 minutes. If desired, season with pepper flakes or hot pepper sauce. Garnish with corn chips, sour cream and cheese.

Preparation: 20 minutes

Cook: 10 minutes

Ingredients:
4 ounces butter
1 cake server pumpkin, peeled, diced and cooked (about 15 minutes in the oven @ 400F)
1 package whole wheat bread with sweet potato gnocchi
3 ounces shallots, chopped
8 oz shitake mushrooms, sliced
1 bunch fresh sage, cut chiffonade
1 ounces white wine
1 pint cream
grated Parmesan cheese, as needed

Directions:

Heat the butter over mediumFlame and add the gnocchi, shallots and mushrooms. Saute until slightly expanded gnocchi cooks tender and slightly and the onions and mushrooms finish by cooking. Add sage and deglaze with wine, adding the cream the next. Thicken with cheese, roasted pumpkin throwing gently and serve immediately.

Pumpkin Black Bean Soup

Serves: 4

Preparation: 30 minutes

Cooking time: 20 minutes

Ingredients:
2 tbsp. Olive oil
1 sweet onion,chopped
1 clove garlic, chopped
02:01 cup white wine
2 cups vegetable broth
1-28 oz can diced tomatoes
2-15 oz cans black beans, drained
1-28 oz can pumpkin puree
1 cup cream
1 tbsp. Coriander
2 tsp. Ground cumin
1 tsp. Cayenne pepper
Salt and pepper to taste

Directions:

Oil into a soup pot. Add onions and garlic and sweat for five minutes until they are translucent. Deglaze with white wine. Add stock, tomatoes, black beans and pumpkin. Bring to abring to a boil and simmer for ten minutes. Add cream and spices to bring up and cook for another ten minutes. Season with salt and pepper and serve with chopped chives.

Eggplant and roasted red pepper Frittata

This is an incredible Italian omelet, which is perfect for breakfast, brunch, lunch or dinner. Serve as an appetizer warm or hot or cool completely and serve as a side dish or a hearty snack.

Eggs, milk, coarse salt and freshly ground black pepper In a large bowl and whisked together until mixed well. The cubes are pan-fried eggplant until light golden brown and are tender. Roasted pepper and extra virgin olive oil stirred into the eggplant, and theMixture is boiled until the vegetables are heated through. The beaten eggs are poured over the vegetables and cook until the eggs are set. The frittata is placed under the preheated grill for an additional two minutes to brown the top and edges.

Cook's Notes: To remove excess liquid from the eggplant, slice the eggplant crosswise into ovals, salt lightly and set the wheels in a colander for about 30 minutes and let the eggplant drain. Toss the eggplant gently every 10Minutes. Some evaporation will occur on the surfaces of the eggplant. The draining process takes some of the bitterness from the eggplant.

Lift the eggs on the sides of the pan with a spatula, gently cooked so that eggs move to the bottom of the pan.

Recipe requires the use of fireproof pan.

Eggplant and roasted red pepper Frittata

10 Large Eggs
Cup whole milk 02:01
2.1 tsp coarse salt
4.1 tsp fresh groundBlack Pepper
3 tablespoons extra virgin olive oil, divided
2 cups finely chopped peeled eggplant
1 (12 ounce) jar roasted red peppers, drained, chopped
Cup freshly grated Parmesan 04:01

1st Eggs, milk, salt and pepper to bowl. Whisk to combine strong.

2nd Add 2 tablespoons extra virgin olive oil, oven proof frying pan. Heat over medium heat until the oil is hot but not smoking.

10th Sprinkle freshly grated Parmesan cheese over eggs. Place pan, uncovered in hot broiler for two minutes, or until the edges are golden brown and eggs are completelydefined.

6 medium carrots, quartered
boiling water
4 medium onions, sliced

In a large saucepan combine two of the stock cubes with the carrots. Add boiling water enough to cover the carrots, stir to dissolve the bouillon. Cover pan and for 10Min. Add the onions and cook for a further six minutes or until carrots are just tender. Drain.

In a large skillet melt the butter over medium heat. Add the bouillon cube and the third Splenda. Stir until the bouillon is dissolved. Add the carrots and onion mixture. Cook, stirring frequently, until the carrots and onions are golden and glazed. Sprinkle with the chopped parsley just before serving.

Note: This recipe can also be made with chicken broth.

1 cup old-fashion or quick cooking oats
1 cup all-purpose flour
1 tablespoon Splenda granular
1 1 / 4 teaspoon cinnamon
2.1 tsp ground nutmeg
04:01 cup firmly packed Splenda Brown Sugar Blend
1 stick unsalted butter softened
5 cups fresh berries that is, blackberries, raspberries, blueberries, cherries, pitted, or a combination of more than one.

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan with nonstick cooking spray.

In a large bowl and oats,Flour, Splenda, cinnamon and nutmeg. Add brown sugar, mix until no lumps break the back of the spoon. Add butter, the distribution of the oatmeal mixture with your hands clean is the best way until crumbly. Place the berries in the bottom of the prepared pan.
